Date and Dark Chocolate Loaf Cake

 

Here is my recipe for a date and dark chocolate loaf cake.

Ingredients:

  • 100g dates
  • 125ml hot water
  • 1tsp cinnamon
  • 1 tsp ground ginger
  • 100g soft brown sugar
  • 175g margarine/butter
  • 175g SR flour
  • 60g cocoa powder
  • 3 medium eggs
  • ½ tsp baking powder

Preparation:

  • Pre heat the oven to 170◦C (fan)
  • Line a large loaf tin

Method:

  • Stone and chop the dates and soak them in the boiling water with the cinnamon and ginger
  • When cool beat in the butter
  • Beat in the eggs
  • Stir in the flour, baking powder and cocoa powder
  • Bake for 45-55 minutes, let it cool in tin before turning out onto a wire rack
