Here is my recipe for a date and dark chocolate loaf cake.
Ingredients:
- 100g dates
- 125ml hot water
- 1tsp cinnamon
- 1 tsp ground ginger
- 100g soft brown sugar
- 175g margarine/butter
- 175g SR flour
- 60g cocoa powder
- 3 medium eggs
- ½ tsp baking powder
Preparation:
- Pre heat the oven to 170◦C (fan)
- Line a large loaf tin
Method:
- Stone and chop the dates and soak them in the boiling water with the cinnamon and ginger
- When cool beat in the butter
- Beat in the eggs
- Stir in the flour, baking powder and cocoa powder
- Bake for 45-55 minutes, let it cool in tin before turning out onto a wire rack
